Where to Find that Ingredient or Bakeware
WhItE_PoPlAr suggested that I put up a list of contact information for shops that sell elusive baking ingredients or bakewares so readers here can easily find out where to shop for that hard-to-find baking ingredients or special bakewares. Elusive hard-to-find ingredients would be things such as cake emulsifiers, Japanese rice flours, lye water, etc. I think that’s a superb idea so I’m creating a post here for just that information. I will just start with contact information here in Melbourne first, but I hope readers from other states and cities here in Australia can also contribute by providing contact information – i.e. name of city, name of hard-to-find baking ingredients sold, name of shop, address and telephone number if possible – so I can compile them and list them here in this entry. I especially need information on Asian supermarkets which carry more obscure products which you cannot find in normal supermarkets or grocery stores. I've included professional kitchen shops as they would always be the first place to look for a variety of different bakewares and kichen gadgets.

The only Chinese bookshop I know that stocks good current Chinese cookbooks from Taiwan and Hong Kong is a small Chinese bookshop (集文) in Footscray at Shop 10, 119 Hopkins St - that's the address but the shop is actually on Leed St around the corner, opposite Footscray Market. Thay don't have that much selections in terms of cookbooks (probably around 20-30 titles at the most) but at least they are current publications. I'm sure there must be other bookshops that carry good cookbooks but I haven't found them yet, maybe at Box Hill or Springvale where there are more Asians.
As for English titles, I haven't seen any apart from the one put out by Elizabeth Chong a couple of years ago called 'Tiny Delights' if I remembered correctly. Can't rememeber whether it is an AWW cookbook or not, but it is in the same magazine-size style cookbook. Also not sure whether it is still in print or not.
If you want to search for other English titles, maybe try 'Books for Cooks' at 233-235 Gertrude St, Fitzroy (Tel: 8415 1415). HTH.

Yeah, I thought so, because haven't seen that book in the shops for a long time now. Pity I also did not buy it when it was out.
As for salted egg yolks, are you talking about those frozen ones in plastic containers? Haha, I also bought those to use, just choose better-looking ones... Couldn't be bother with whole ones :P
Yes, KFL frozen section should have it but it is not for sale all year round, only around this time of year, so should be able to find them soon.
SD, thanks for posting and sharing this very useful information. Can I ask whether you have come across any local shop selling 'apricot gel'? I know can subsitute with apricot jam but somehow I find it doesn't give that shine/gloss. tks _k

Haha, apricot gel is still an elusive item, haven't found it yet. Used to be able to buy clear glaze for fruit tarts etc, German product, I think it is 'Dr. Oetker' (sp?) brand from Coles or Safeway (can't remember which one now), but they stop selling it about a couple of years ago. I think maybe check out 'The Essential Ingredient', they might have it.
